Coffee jitters getting you down?

Nothing is more alluring than the infusion of spices in a delicious cup of chai early in the morning –  I make sure to start every day armed with a thermos. Not only does the process of creation ground me in the morning, taking 15 minutes to nurture myself allows me to be more focused throughout the day.

You too will see how making chai can become a form of meditation…

Ingredients:

Whole milk (whole organic milk is best – buffalo or cow, 2% and 1% are missing the good fats)

Ginger

Sugar

Loose Black Tea

Cardamom (Green or black)

Cloves

How to:

Boil 1 cup of water, 1-2 spoons sugar (organic cane), and grate 1 inch of ginger into boiling water. After ginger has boiled (about 1 min), add one teaspoon of loose black tea (I use Indian Orange Pekoe).

After mix has boiled for 1-2 minutes and ginger is cooked, add 1/2 cup milk. Add 3 crushed cardamom and 2 crushed cloves* (all crushed in a mortar and pestle). Wait for entire liquid to boil 3 times, and then strain. Yum yum!

*winter blend includes crushed black pepper and some cinnamon. fennel can be added for digestion.

  1. I start my day, every day, with chai. Ever since my time at HI I fell in love with this marvelous morning miracle. And when we made it together that morning in the Himalayan Institute kitchen I knew this love affair was never going away. Thanks for the recipe, I needed an update on the details as my chai hasn’t been up to snuff lately. Hope all is well with your loveliness!!

  2. may be you can add 1/8Tsp of cinnamon and honey to taste instead of white sugar.

    cardamom—good for heart
    ginger ——-good for digestion
    clove———antibacterial
    cinnamon—-controls blood sugar level
    honey——–good for many things
